This is an interesting exercise, but in practice it's a very overcomplicated way to solve linear regression. The problem already has a closed-form analytical solution via Ordinary Least Squares, which yields the exact optimal coefficients directly with just a few matrix operations. Gradient descent only approximates the optimal coefficients and is typically much less efficient.
